Inka Crops, Peru
From Plantains to Perfection: How PEF Powers Inka Crops’ Quality with an Elea PEF Advantage B10 320 system.
A Taste of Peru with a Modern Twist
Since 2000, Inka Crops has been bringing the flavours of Peru to the world, specialising in the production and marketing of gourmet and alternative snacks. Known for their premium plantain and vegetable crisps, the company takes pride in using high-quality Peruvian ingredients and maintaining strict processing and quality standards.
The Start of a Promising Partnership
In 2019, Inka Crops began collaborating with Elea, exploring the potential of Pulsed Electric Field (PEF) technology for their snack production. Initial testing took place at Elea’s pilot facility in Quakenbrück, Germany, focusing on plantain and vegetable crisps, as well as traditional Andean snacks.
The trials revealed a range of benefits:
Improved slicing of raw materials
Higher yields
Reduced frying time and temperature
Enhanced texture and colour of the final products
Scaling Innovation
Following successful trials, Inka Crops installed an industrial-scale Elea PEF Advantage Belt B10 320 system in 2020. The technology was integrated into their production line for potato, sweet potato, cassava, carrot, and plantain crisps.
Andres Abusada, CEO of Inka Crops says:
“Since then, we have been using the Elea PEF system for our potato, vegetable and plantain chips production. We have been able to confirm process and product quality benefits, so PEF has become an important part of our production line.”
