Investigating PEF Applications for Kombucha Processing
After completing his Bachelor's degree in Food Science and Technology, Federico is currently pursuing a Master's degree in Food and Beverage Innovation and Management at Università Politecnica delle Marche in Italy.
During his time at Elea, Federico worked on his Master's thesis, focusing on the use of Pulsed Electric Field (PEF) technology for microbial inactivation in liquid food matrices. His research explored the application of PEF to kombucha, investigating its effectiveness in microbial inactivation while preserving the beverage's quality characteristics.
